I could eat pancakes every single day for the rest of my life and be perfectly happy. I wouldn't want anything more than that! Blueberry pancakes also happen to be my favorite kind of pancake so I was in love with these!
I've always seen recipes for greek yogurt pancakes but never actually got around to trying any out for myself. I was missing out! I wasn't sure what the yogurt would do to the pancakes but these still turned out fluffy and light. I was very pleased with how they turned out!
I did some adaptations from this recipe here because basically I just wanted an idea of ratios for the yogurt and flour. I often do that for a lot of recipes I see. I do some research to look at the different ingredients, find out what healthy substitutions can be made, and ratios to get an idea before making my own!

So for these pancakes here's what you'll need:
1/3 cup flour
1/3 cup plain Greek yogurt (I use 0% Chobani)
1/3 cup blueberries, fresh or frozen
2-3 tbsp unsweetened almond milk
2 tbsp egg whites
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp vanilla
1 packet of stevia
Combine all the ingredients and cook the pancakes over medium heat. I didn't have fresh blueberries for this recipe since they're still kind of expensive. The frozen ones worked just as well! I just thawed them in the microwave for about a minute then rinsed them out so that they wouldn't turn the batter purple! Usually I wouldn't mind but I wanted to take at least a decent picture for you guys!
Here are the macros! I knew they'd be pretty high in carbs but I didn't mind at all since they turned out to be the best post-run dinner!
I was pretty excited with how well my run went considering I've been taking it easy on my foot. I went for a run this past Thursday for the first time in a couple weeks and it was hard to hold myself back. I wasn't really paying attention the first mile or so but when I saw that I was breaking in to the 7's I slowed myself down! I ended up talking myself down to only 4 miles because honestly I wanted to do so much longer than that. I did 5 yesterday morning and paced myself a lot better since Layla and Amanda joined me for the first 2 miles.
After I got back from my run on Thursday and made these pancakes for dinner, I hung out with my number one snuggle buddy!
She was being extra needy and kept asking for more kisses (which the normal amount is usually a ton haha!) but you'll never hear me complain about that :)
She would only fall asleep if I kept my arm around her and she kept her one paw resting in the palm of my hand. Layla is definitely the cuddle queen! We had a relaxing night together as she kept me company while I read before bed. I've been on a reading kick lately since I've started downloading library books on my kindle. It's so easy to use and I love how the books just automatically go back after the loan expires so I don't have to worry about late fees! It's always the little things that get me haha!
